how can we block user from editing sale order ?

Generally that should be done through permissions. But it also blocks sales invoices,...

You can also use this: http://www.mibuso.com/forum/viewtopic.php?t=38353.
But instead of securing a field, you make the complete form non-editable (CurrForm.EDITABLE(FALSE);)
